Happy Halloween

Travis had his back surgery a week before Halloween so Grandma and Grandpa Lake came to help and they got to come do some Halloween stuff with us. They were so great and helpful we love having them come visit. This is at Gardner Village that place is so awesome!

We had a great time Trick or Treating the weather was perfect!!!! They got way to much candy and loved every second of it!

Travis and I are doing the South Beach diet I found a lot of great recipes that I wanted to share with any of you that are doing this diet too. I love it! So these are for Phase 1.

Toast-Less French Toast- so so good
2 eggs or 1/2 c liquid egg subs.
1 dash of ground cloves
1 dash of ground nutmeg
1 pinch of ground cinnamon
1 cap full pure vanilla extract
butter and sea salt
sugar free maple syrup

1. warm small frying pan with 1 T of unsalted butter add a tiny bit of sea salt.
2. combine egg, cloves, nutmeg, cinnamon, and vanilla in a bowl and whip with fork.
3. once butter starts bubbling pour in egg mixture.
4. once eggs are mostly cooked flip over and cook bottom side.
5. once firm it is done.

Crepes
2 eggs
2 T lowfat ricotta cheese
vanilla
cinnamon and nutmeg
splenda

mix together and bake like a crepe in a med frying pan.

Filling
1/4 c lowfat ricotta/cottage cheese
lemon juice
cinnamon
splenda
cocoa

light cool whip on top

Waffles
4 eggs
1/2 c. lowfat Ricotta cheese
1 t. cinnamon
1/4 t. nutmeg
1 t. vanilla
1/2 T. splenda
1 t. baking powder

1. mix eggs with mixer on high for 1 min. add remaining ingre. and mix well.
2. pour in oil waffle maker (if you have a waffle maker that flips make sure and let it sit for a minute before you flip because it is kind of runny.

Okay I know this one sound really weird but when you can't have any carbs, fruit, or sugar at all for two weeks these are the best thing you will ever eat. Try them seriously!!!!
Chewy peanut butter cookies
1 egg
1 c. splenda
3/4 c. peanut butter
1/4 c. lowfat ricotta cheese
1 T. vanilla
(for chocolate PB add 2 to 4 T cocoa and splenda)

Spray cookie sheet bake on 300 for 10-15 min.

Parmesan crusted Pork Chops
3/4 c. parmesan cheese grated
1/4 t. dried basil
1/4 t. garlic powder
1/4 t. dried oregano
1 dash black pepper
1/4 t. thyme
1/4 c. Dijon mustard (I used regular)
2 T. Olive oil
2 lbs pork chops (top loin, lean boneless)

1. preheat oven to 400
2. line baking sheet with parchment/wax paper
3. In a small bowl whisk together mustard, oil, and spices
4. season the pork with pepper and brush both sides with mustard mix
5. press the Parmesan onto both side of pork
6. bake for 15-20 mins
7. you could also do this with chicken really yummy

I just did this one tonight really yummy
Chicken Capri
1 C. lowfat ricotta cheese
1/2 ts. dried oregano
1/4 t. salt
1/4 t. black pepper
4 boneless, skinless chicken breast halves
1/2 t. garlic powder
2 T. EV Olive oil
1 C. crushed tomatoes (you could use a lowsugar spagetti sauce or homemade)
4 slices of Moz cheese (or provolone)

makes 4 servings
1. blend ricotta, oregano, salt, and pepper in processor
2. rub chicken with garlic powder
3. heat 2 T EVOO in large skittet over med heat
4. add chicken and cook for 12 mins on each side
5. remove and let cool in large baking dish
6. preheat oven to 350
7. spoon 1/4 c of ricotta mix on chicken and 1/4 c of tomatoes on each breast
8. Top with a slice of Mos cheese bake for 20 mins

Keslee had a really loose tooth for a long time and I could have pulled it out on Christmas Eve which would have been funny but she was too scared. So this my first year with both mine and Taylins birthday back to back and all I can say is this going to be crazy the older she gets it is just so busy anyway. I hope I can learn to manage and help her have great christmas time birthdays. Oh what was I thinking :) She was so cute we let her go at it and she wouldn't touch anything except the sprinkles until we gave her a fork not like she used it or anything. I guess she doesn't like messy hands :) She is a princess.
She liked all the presents and balloons. She just skooted around the room chasing after them :)

Thanksgiving 2009

This was a fun year our first Thanksgiving in Utah! We had my family come from Idaho and Travis's two brothers so it was a full house :) It was great to have all the company and nice to stay home. The highlight for me was going to Primary Childrens hosital to drop off the hope wraps that Whitney had made for the Cancer patients. They are scarfs for the girls to wear when they lose their hair. It was such a great idea and really special to see the hospital. Isn't it cute :)

Okay is that not the funniest bowl of potaotes ever? I probably laughed about these potates for a good 20 minutes. Me, my Mom, Tiffany and Whitney were in the kitchen cooking dinner for Thanksgiving my mom and I were working on something when we turn around to see that TIff and Whitney had peeled every potatoes that we had in the kitchen :) It was so funny because after we had finished eating we go to clean up and see that the big bowl of potatoes was still full to the top we just ate the over flowing part :) Lots of leftovers huh :) That's what happens when girls are cooking together and they start talking eh :)
Keslee's big thanksgiving parade for dance! Okay have you ever been to a parade in the winter? It is unheard of why would anyone want to stand out side in the freezing cold and watch a parade and not to mention who wants to be in a parade with their toes and fingers getting frost bite :) That was a new experience and it turned out to be fun freezing but fun. Hey my dad has the right idea:)

Keslee was so excited about having a birthday party this year because I have spoiled her and had one every year since she was two and the mean mom that I am told her that we were going to have a family party instead. She was really upset I even found out that she had made invitation and gave them to all her friends at school to invite them to her sunshine party behind my back ;) But after she saw all the presents and cake she was fine with a family birthday. She even got to choose a fun activity and whatever dinner she wanted. We went to jumpin jacks a bouncing house place and instead of any resturant she choose to go home and have mac & cheese and hot dogs :) I can't complain cheap and easy but very very gross :) Oh and one more funny thing when she said her prayers that morning she said "please let my daddy give me soft birthday spankings" :) She is a bit of a drama queen but we love that about her makes life intresting and very comical :)

So sorry camera broke so I took a blog break okay!!!!!! ;) We are finally in our new house now we moved in the end of July. Starting to get into the groove of this new place. Keslee started school a couple weeks ago (post pictures later) and we have got everything put in it's place. Now we just have to fill all the empty walls and rooms. It takes a year right ;) We live in South Jordan near the new temple it is so beautiful and hot which I love so far. Travis is doing great with his new position it has been a lot of work and a few more over-nighters than I am use to but I will get the hang of it. Travs brother Rodney AKA Rod-bo is now living with us which has been fun for us I don't really know how he is feeling about it :) He gets pressure from Travis and I everyday about girls. He is learning to hide out :) We really like our new house just trying to decorate AHHHHHHH not my specialty. Any ideas?????

Wow it has been crazy in the Lake house well I guess we don't really have a house at the moment but soon. We left our first home in Vancouver the end of June. It was really sad to say goodbye to everyone and to leave my comfortable home not to mention my vegetable garden that I had to leave there to die! We have been in Vancouver for four 1/2 years so naturally we have a lot of memories in that house, two babies were born there, I had a major knee syrgery there and mourned my sister dealth all in that house. So I will say it is a biiter sweet move for me. It is nice to move on and make new memories.
So we finally found our house after looking at over 60 homes!!!!! It is in South Jordan near the new temple. We have all loved it here so far. My kids have been having fun with so many kids all over the place. They are not use to this. We love all the water parks and kid stuff. My favorite with the kids is going to a resturant and not getting stared at when our kids are jumping up and down and throwing fries on the floor :) And church is awesome no one can hear my kids with the other 200 kids in the room :) There is bound to be a couple who are lounder than mine! Yeah we are excited to be here and get into our new home July 23rd is the move in date!!! Yahoo!!!!

We blessed Taylin on March 8th it was such a good blessing. We were able to share it with family and friends thank you all for coming. She did so good too she only cryed at the very end because Travis was holding her head lower than her feet she came up with a red face :) And I finished her dress just in time it turned out alright for an amiture :) She looks like an angel in anything. Sweet sweet Taylin :)

Wow it has been a while since I have sat down on the computer I usually have two minutes to check my e-mail every couple days. Even now I am typing one handed with Taylin in the other hand. Gotta luv it while they are little they grow too fast! It has been crazy and wonderful with three kids. Definitely not an easy task but my favorite so far! I kept hearing how hard three was I would hear the "after three it is easy". But I think it is just circumstance. I think my first two "Spirited" kids prepared me for this. Here is my experience (if anyone cares if not the pictures are below) :) Keslee was hard because I didn't know what I was doing and It was a big adjustment from taking care of only me to not having time to take a shower or sleep at night. Having two was a ch allege because Keslee was two and she wanted to play and be around other kids I always felt like I need to go somewhere and let her play with others. But with three kids I have been amazed how nice it is Keslee and Brixton just play with each other all day and have fun together and I have time to take care of Taylin and focus on her I don't feel like I have to go to every playdate or story time at the library. It really has been great for the most part. Now grocery shopping is not included in this that is just a terrible nightmare with three kids!!!!

Keslee and Brixton have two favorite pastimes. Swimming and riding the carousal. I am usually the one taking pictures and watching the kids try to find my face and wave while they are getting dizzy. So Funny! (I should include Travis in that too because he is always the first to offer to take them. He's just a big kid)

These two should be fish! If there was one thing that we could do everyday all day this would be it. They probably got that from me. I love to swim. I think swimming lessons are next on the to do list :)

We have a Christmas Tradition that we go to a u-cut farm pick out our tree and cut it down ourselves. It is really fun and I love getting all bundled for our tree searching adventure. After a while they all start to look the same so we just have to say okay this one! We found a perfect tree this year we love it!!!!

Keslee wanted to have a Princess mermaid/ariel party with only girls so we had nine adorable girls over for our party :)
We decorated like we were under the sea with lots of fish hanging from the celing and balloons everywhere. Like we were swimming in the water :)
The fishing game was the hit of the party they wanted to do it over and over again!

The pregnancy glow!

One of the worst parts about being pregnant for me are the comments that I get from people. Now I understand that no one is trying to be mean and sometimes people just don't know what to say but does that give everyone the right to just say whatever they want? I wish I could say what I wanted to but that doesn't really go over so well. I don't understand who said it was okay to tell a pregnant woman exactly what she looks like over and over. But if I went up to someone who had a big nose and told them that there nose was so big that wouldn't really work would it. Okay I know that I am a little hormonal but it is just getting really old! So this is my way of saying what I always wanted to say (but not to anyone's face you know I wouldn't want to be rude) :)

These are some of the most popular ones:

"Oh you look like you are going to pop!" Okay How do you respond to that? I am not a balloon thanks.

"You are getting so big!" Yeah you think I don't know that?

"Are you having twins?" That is just another way of saying that I am look like a whale. Nice!!

"When are you going to have that baby?" Believe me I'll let you know!!!!

"Wow you are looking so fat!" Okay I only heard this one once but seriously someone said the word FAT!

"Oh my gosh does it hurt?" Yes it hurts what do you think!!!

So next time you want to make small talk with a very hormonal pregnant woman just ask her how she is feeling or tell her she has the glow of a pregnant woman or ask her if she needs a foot massage! These other comments don't make us feel any better. No one wants to hear that they are so big even if we are, I understand I am big I can hold a freakin cereal bowl on this thing alright you don't need to say it out loud can't we all just pretend PLEASE!!!!! :)

"Open Sucker Mama!!" this is all I ever hear from my little boy. He ate three on Halloween because he kept finding people (or should I say suckers) that would open them for him because I wouldn't :) Little stinker. Suckers are his favorite thing in the entire world!

Here we are trick or treating around the neighborhood we are crazy it was like 8 pm these poor kids they are so tierd. The things we do on Halloween just for some free candy!

We got it down by the first few doors they would say Trick or Treat or Brixton's words "Stik a steet!" Then when they got their candy they would say Thank you and then they would yell Happy Halloween or in Brixton's language "Happy Hween!" They were adorable!

Pumpkin Carving Contest

Of course we always end up doing most of it but the kids like it anyway. Keslee really did most of hers this year. I was really proud of her and she was pretty proud of herself too! :)

The Pumpkin Patch

We have a fun Halloween tradition every year we take to kids to a pumpkin patch and pick out our pumpkins. There is a hay bail pyramid to play on a corn maze, a petting zoo, tractors for the kids then we take a hay ride out in the field and pick our own pumpkin. Lots of fun for the kids. We all love going. Good ole' family fun huh :)

Hawaiian North Shore

This was one of our favorite spots. Good food and not so busy with tourists. The Shaved Ice here was the best we went back three of four times. Oh and the garlic shrimp very tasty.
We even got to see a sea turtle he was so cute I had to get friendly :)

The Pearl Harbor Memorial was very cool. I have never seen one that goes so in dept as Pearl Harbor did I really felt like I understood what happened that day. The USS Arizona was heartbreaking to see and to think of all those people who did in it. It was extremely sad.

The Polynesian Culture Center is really awesome. I loved it and we both were surprised how big it is. Like a Hawaiian Disney Land. I do have to admit by the end of the day we were feeling Poly overboard. The Luau was awesome the food was so so good we stuffed ourselves until we were about to pop. I have never eaten so much Kahlua Pig in my life! Mmmmmmm Loved the dancers too!

We got to spend a morning walking around the temple. We loved the visitor center and the park behind the temple. We saw some really cool trees and beautiful flowers. It was really nice.

One day we just drove around the entire island of Oahu. It was beautiful we stopped to see the views and swim at some of the local beaches. It doesn't get better!

Hawaii Vacation

We had so much fun in Hawaii! This is us hiking Diamond Head it was so hot that day I can't believe I made it. I felt like I was carrying a backpack on my tummy (well I quess I kind of am) I am seven months pregnant here and I got a lot of "Good Jobs" and "Hey if she can do it so can you" on the way up. The view was amazing it was really fun I am glad we did it.

Brixton is 2 all boy and more. Except when he wears my cheeta heels and polka dot head band but just a phase I hope. He loves balls, cars, trucks, tractor, airplanes basicly anything that moves or has wheels. Brixton doesn't like messes and he always takes care of him mommy today he got me a pillow without me even asking when I was reading him a book on the floor because he could see I was uncomfortable and later I walked outside to talk to someone on the front porch and here comes Brixton with my flip flops because he didn't want me to be outside with no shoes he even put them on my feet for me :) What a sweetheart I hope that never changes.

Keslee is 4 and 3/4s going on 8. She is very very outgoing we can't go on an elevator without her telling the other people her name and what she did that day. She defintly has no problem making new friends. She loves to read, watch movies and play with her friends. She loves to write and draw pictures and can't wait for school to start again. She is a dancer and a singer and she is full of energy. Always having fun and laughing. Yesterday as I was driving to the park she annouced, "When I grow up I want to be a mom so I can stay home with my kids so they don't have to go to daycare." Who knows where that came from but she is on the right track I guess :) She is my little friend and I love our night time talks before bed. She can always make you smile!

Pioneer Day

We have a fun stake 24th of July party every year. There is a lot of pioneer games for the kids. Everyone from the stake comes and we have a yummy BBQ. Brixton thought roping the cow was pretty cool!

Ahh The Oregon Coast. It's always a little chilly but it is really pretty. My kids just love getting out of the house and staying in a hotel. There are shops and rides at seaside and we even got to see a real helicopter up close Brixton couldn't stop talking about it for days :) We got to fly the kite and play in the sand. We swam in the hotel pool and my kids decided not to be scared of the water which made me a little scared. Brixton would climb out of the pool and run to the deep end away from us and jump in all by himself. He had arm floaties on but he still would go underwater. Then he would pop up and start laughing and want to do it again. He didn't want anyone to hold him either did Keslee I was really proud of them both. My little water babies want to swim so bad. We ending up going swimming alot because they loved it so much. It was a fun trip :)

I love the Fourth of July probably because of all the food but I love the parades and fireworks too. Travis ended up getting Strep throat so we left him home and took our neighbor kids to the parade it was awesome we came home with a backpack full of candy. There were fighter jets flying above us the kids were lovin it! Then we do a cul-de-sac party BBQ and do fireworks together. We like our neighbors lots of kids so we had a great time.

Brixton turns TWO WHOO HOO!!!!

It was an airplane party because Brixton loves them. We had fun we went to Red Robin to eat and Red Robin was even there Brixton was excited. Then we went and played at Chuck-E-Cheese (not Trav and my top choice but we were doing it for him and he had a blast) :) Then we came home and had a little party we played dig for the airplanes with shredded paper then we played with slingshot airplanes. Then he open presents and ate an airplane cake. We got him a T-ball he loves it perfect for our active boy :)

I Love a good Drive in Movie

There are not many Drive in movies theatres around here but we found one about an hour away we have been wanting to try it out. The kids loved it we watched Narnia with the air matress and sleeping bags we were really comfortable. We ate popcorn and ate some candy after that Brixton fell asleep and Keslee watched the whole thing even though it didn't get done till 12:30 she loves movies that much! We were tierd but worth staying up for. Gotta do it once! We'll go again after we recover from our late night :)

I would like you to meet Cosmo!

We have had Cosmo for two weeks his named was Duke when we got him and we kept it for a while. We kept hearing too many poop comments when we would call him Dukey or Duker. So we decide to change it and give him our own name. We decided on Cosmo because of Travis's obsession with the BYU Cougars Cosmo the Cougar. GO Cougars! It fits him. Cosmo is six months old and he is a puggle a mix between a Pug and a Beagle. He is full grown now and so adorable. We have had to adjust a little escpecially me. But I am surprise how much I like him. He is so cute and cuddles with me every night. The first time I picked him up and started talking baby talk to him I realized we are officially DOG OWNERS! But I promise you right now I will never dress him or compare him to a child that is going to far! We love our little Cosmo :)
